You can uninstall Mixcraft 9 if you want. Some people keep it around for a while in case they want to go back and check something.
Mixcraft 10 can open projects from older versions, but older versions can't open Mixcraft 10 projects.
Not sure what you mean by AI. Mixcraft 10 Pro Studio includes the Stem Separation feature, which uses AI. You can choose to install that or not.
If you don't want to download some features, you can go into Account preferences and un-check them (some items are not optional, however).
For items that aren't in that list, you can wait on those also if you want.
